We just got back from a family weekend getaway to San Francisco. We saw a lot of stuff, but there were some major things we missed. And if I’m being honest, this is probably the first time we’ve traveled as a family where I wasn’t exactly thrilled with the vacation. Don’t get me wrong, spending time with my guys, no matter where we are, is the best. And we love to travel, child included. But sometimes, upon reflection, the trip just wasn’t as great as it could have been. Delightful Chicken Salad Recipe

This chicken salad is a delicious make ahead light lunch! Whisk 1/2 c of light mayonnaise (I used Duke's Light) with the juice of half a lemon, salt & pepper to taste, and a shake or two of garlic powder and poultry seasoning. Stir in 2 c of chopped, cooked chicken breast (I used leftovers from my easy roast chicken recipe), and 1/4 - 1/3 c EACH of chopped celery, green apples, and red grapes. You can serve it immediately in wraps or on toasted wheat bread, but it tastes great after sitting in the fridge for at least a few hours.

Need an easy meal for your friend with a new baby? Breakfast dishes are a welcome change to all the dinner casseroles. Whisk 6 eggs with 3/4c milk, 1/4c flour, salt, pepper, and a dash of hot sauce (optional). Stir in 1/2c EACH of cooked meat (like bacon, sausage, or ham), chopped veggies (diced peppers and onions maybe!), and grated cheese (any!). Pour into a greased square casserole dish and bake at 425°F for 20 mins. Package it up with some tortillas and washed/prepped fruit for an easy one-handed heat-n-eat breakfast. Great for dinner too!

Easiest Roast Chicken Recipe

Roasted chicken and veggies doesn't get any easier than this! Coat split chicken breasts, cut up potatoes, carrots, onions, and brussels sprouts in olive oil, sprinkle on salt and pepper. On separate pans, roast at 350° for 1 hour, broil for the last 5 mins. Let chicken rest 10 mins before cutting.  Use leftover chicken to prep Delightful Chicken Salad for lunch the next day.

Korean Turkey + Rice Bowls Recipe

Wondering what to make for dinner tonight? Korean Turkey + Rice Bowls! Brown 20 oz ground turkey breast in 1 Tbsp sesame oil with a few shakes each of garlic powder and ground ginger.Stir in 1/4 cup each of brown sugar and low sodium soy sauce.Lower the heat and stir as sauce thickens onto meat.Serve over hot white rice and steam-in-the-bag stir fry veggies.Garnish with chopped scallions and sriracha (optional). Yum! PS: Make sure to take some meat out of the freezer for tomorrow.

Comforting Light Stroganoff Recipe

This Mushroom + Turkey Stroganoff Recipe is a super yummy comforting dish ready in 20 mins or less! Boil water and cook wide egg noodles according to directions.Spray large skillet with cooking spray and cook half an onion (chopped) and a package of sliced mushrooms over medium high heat until soft.Add 20 oz ground turkey breast, salt, pepper, and a couple shakes each of thyme, paprika, and garlic powder and brown until no longer pink.Stir in 1 can of reduced fat cream of mushroom and 1 tsp beef flavored Better than Bullion. Reduce to low and simmer until noodles are done. Stir in 1/2 cup light sour cream right before serving with peas or another frozen vegetable.

Easy Sausage + Sweet Potato Skillet Recipe

Everyone in my house likes this recipe, and there are never any leftovers! We've even had it for breakfast with some runny yolk eggs. Yummmm... Cube 2 medium sweet potatoes, microwave in a glass bowl covered with plastic wrap for 5-6 mins (fork tender).In a large skillet, sautée (med-high heat) 1 chopped package smoked turkey sausage, red 1 chopped bell pepper, and a chopped onion in olive oil.Add potatoes, garlic powder, and chipotle chile powder (optional).Cook for 5-10 mins, stirring often. Serve garnished with chopped parlsey or scallions. Yum!

Guilt Free Creamy Pasta Recipe

This is one of my favorite meals lately. I make it all the time and it really hits the spot when you're craving creamy pasta goodness. gluten freegrain freedairy freepaleowhole 30TIU friendlyvegan I don't really measure so forgive me, but this is really easy and fast and uses only one pan. Tons of food, no prep and minimal cleanup! Saute about half a 8oz container or sliced mushrooms in coconut oil spray over high heat. Shake the pan around a bit and when they're brown......add about half of a container of butternut squash noodles and some salt and garlic powder. I like mine REALLY garlicky!!!
